This is a tried and true recipe that will delight most. I was thrilled to get comments from many of my guests as to how much they enjoyed it especially one dear stampin friend who commented about how it took her back to her native land of Germany! I was surprised to hear that since it’s an Italian recipe, but I suppose that many European countries have recipes that are similar to each other. Soup is one of my favorite foods, so when I was coming up with a menu, it was a no-brainer for me to include this one – perfect for a November event.

(We grew up calling it Meatball Soup)

Meatballs

  • 1 1/2 lbs lean ground beef (I often use a combination of ground veal, pork, and sirloin)
  • 1/2 to 1 cup Italian bread crumbs
  • 1/4 cup fresh parsley, chopped
  • 4 – 5 large cloves of garlic, minced
  • 1/2 cup finely grated parmesan cheese
  • 1 large egg
  • Salt and freshly ground black pepper

Mix together all of the above.  

Soup

  • 1 1/2 cups 1/4-inch diced carrots
  • 1 1/2 cup 1/4-inch diced celery
  • 5 (14.5 oz) containers of chicken broth or homemade chicken bone broth
  • 1 head of escarole, chopped

Bring soup to a boil with carrots and celery.  From meat mixture, form small meatballs (approximately one inch diameter or smaller) and carefully add to the soup. Lower heat to maintain a gentle boil.  

When the meatballs begin to rise to the top, add chopped escarole.  Cook for a few more minutes.  Turn off heat, and let sit for a bit before serving.  

1 lb box dry Acini Di Pepe pasta – cooked separately as directed on box.  (If unavailable, Orzo pasta may be used as a substitute)

Add pasta to soup as desired.

I usually put the desired amount of Acini Di Pepe in individual soup bowls, and then add the soup to the bowl.  Those who cannot have pasta, skip this step.  

Add grated Parmesan as desired when serving.  

I often combine the remaining Acini Di Pepe with the soup in the pot.  

Soup reheats well for another quick meal.

In honor of my newest grand fur baby, Boston Bregs Berreth, I came up with an adorable card that pet lovers would enjoy giving or receiving. This simple Z-fold card is easy to pull together but will impress that special recipient.

To make this Z-fold card, begin with a cardstock card base 4 1/4” x 11”. Score at 5 1/2” and 2 3/4”. Fold in half as shown in Step 1 below, and then fold back the front of the card to the original fold line as shown in Step 2. Now you are ready to add designer series paper, stamps and embellishments.

DSP measurements – inside of card 5 1/4” x 4”, front panel 4” x 2 1/2”.

Using Stitched Shapes Dies largest circle, cut one circle using Real Red CS. Using the next size smaller, cut one circle using Whisper White CS.
