Goodbye Summer, Hello Fall! New Holiday Catalog & Bonus Seasonal Recipe

It has been a beautiful summer season of beach time, visitors, vacationing in New England and Canada, ice cream, and lazy summer nights.  I did manage to do some Stampin’ too, but blogging wasn’t really working for me the past few months.  I managed to post several ideas and keep you up to date on Stampin’ Up! specials via Instagram and Facebook.  Those social media options seem to be easier for me, so make sure you follow me on either or both of those, too. As summer comes to an end and a fall routine begins to take shape, so does my blogging schedule.  I am still learning to find my way around in the blogging world, and having my daughter Bethany here with us the last few days has been ever so helpful as she gave my website a facelift and helped me to become more acquainted with building my blog.  What do you think of the new look?

When I signed up as a demonstrator with Stampin’ Up! in July, 1992, never did I think I would not only grow in my joy of stamping and paper crafting but also become somewhat tech savvy! 😂. It really has been fun learning to blog, and I very much enjoy sharing ideas with you!

Over the next several weeks I will be sharing holiday ideas that will take you through the Harvest and Christmas seasons.

I absolutely LOVE fall festivities and Christmas traditions, so not only will I be sharing card and decor ideas, but also recipes, family fun and favorite traditions that we have enjoyed for decades along with some that we have newly incorporated into the Berreth holidays.

Tomorrow, September 4, 2019 the Stampin’ Up! Holiday catalog will go live!  Avoid the disappointment of not being able to get the products you would like by ordering earlier than later.  As Stampin’ Up! grows in several markets and countries, keeping up with the demand is sometimes hard for them to do.  Since this is a seasonal catalog, not everything is going to last.  Things will sell out.  If you know you want something for your holiday Stamping, don’t delay in ordering.

Berry Baked Oatmeal

As some of you know by following me on social media, we had a lot of lovely visitors this summer.  I’ve always dreamed of running a B&B, and this certainly was a great opportunity to meet that desire.  I thought I would share one of the recipes I enjoy making  for special guests.  I will post more another time, but for now, here is the recipe for Baked Berry Oatmeal.  

Berry Baked Oatmeal

Healthy, delicious, and filling! This baked oatmeal is chock full of berries, pecans, and the perfect amount of sweetness.

Serves: 6 -8 

INGREDIENTS

  • Dry Mixture:
  • 2 cups quick-cook oats (see notes on quick-cook vs. rolled)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt
  • ⅓ cup packed brown sugar
  • Wet Mixture:
  • 2 cups nonfat milk
  • 2 eggs
  • ½ tbsp vanilla extract
  • 3 tbsps honey
  • 1½ tbsp melted butter
  • 2 cups frozen mixed berries
  • ¼ cup pecans, separated

INSTRUCTIONS

  1. Preheat oven to 375 degrees.
  2. In a medium sized bowl, mix together the oats, baking powder, cinnamon, salt, and brown sugar. Set aside.
  3. In a seperate bowl whisk together the milk, eggs, vanilla, honey, and butter.
  4. Layer half the berries in a 2 quart baking dish and top evenly with the dry oat mixture. Pour on the wet mixture, then add the rest of the berries on top along with the roughly chopped pecans.
  5. Bake for 15-20 minutes or until the oats have absorbed the liquid. Serve hot or cold!

NOTES

If using non-quick cook oats, increase your baking time to 35-40 minutes.
